Capers come from a small green flower bud from a prickly bush called Capparis spinosa that grows in the Mediterranean and parts of Asia.

Capers are dried and then preserved in salt or brine to develop a sour, salty, and lemony flavor. Capers complement seafood and pasta dishes and add a tangy contrast to rich or creamy foods.

Capers are not technically a vegetable but rather a fruit and are the un-ripened green flower bud of the caper bush.

A caper bush is a perennial plant (a plant that lives for more than two years) called Capparis spinosa, also called Flinders rose, that bears rounded, fleshy leaves and large white to pinkish-white flowers. The flower bud is the edible caper used in condiments and recipes to enhance flavor.
