Here is a simple recipe for making pasta sauce from scratch:

  1. Heat olive oil in a large skillet over medium heat. Cover the bottom of the skillet with olive oil.
  2. Add finely chopped onions and cook for 3-5 minutes until they become soft. Not brown.
  3. Add minced garlic and cook for another minute. Fresh garlic is best.
  4. Add crushed tomatoes, tomato paste, dried oregano, dried basil, bay leaves, thyme, salt, and pepper to the skillet. You can add fresh cubed tomatoes for added substance and taste.
  5. Bring the mixture to a boil and then reduce the heat to low.
  6. Let the sauce simmer for 20-25 minutes until it thickens to your desired consistency.
  7. Remove the bay leaves and serve the sauce over your favorite pasta.

You can also add fresh basil or red pepper flakes to the sauce for additional flavor.

Here is a simple recipe for making fresh pizza dough:

Ingredients:

  • 3 cups of all-purpose flour
  • 1-tablespoon of sugar
  • 1-tablespoon of active dry yeast
  • 1-teaspoon of salt
  • 1-tablespoon of olive oil
  • 1 cup of warm water

Instructions:

  1. In a large mixing bowl, combine the flour, sugar, yeast, and salt.
  2. Add the olive oil and warm water to the bowl and mix until the dough comes together.
  3. Knead the dough on a floured surface for 5-10 minutes until it becomes smooth and elastic.
  4. Place the dough in a greased bowl and cover it with a damp cloth. Place in a warm spot for 1 – 2 hours until it doubles in size.
  5. Punch down the dough and knead it again for a few minutes.
  6. Divide the dough into two equal parts and roll each into a ball.
  7. Cover the balls with a damp cloth and let them rest for 10-15 minutes.
  8. Preheat your oven to 450°F (230°C).
  9. Roll each ball into a thin circle and place it on a baking sheet.
  10. Add your desired toppings and bake the pizza for 10-15 minutes until the crust is golden brown.
